Value-added Acidified Food Kitchen

Based on years of feedback from customers wanting to enjoy the Edmundson’s produce year round, Edmundson Produce Farm has added a permanent value-added acidified food kitchen to their farm.

The grant will provided funding for renovating an existing structure to become a certified kitchen and covered costs of food-grade flooring and walls, ceiling insulation, lighting, plumbing, electrical, stove, sinks, doors and fasteners.

With nearly 1,000 customers at the WNC Farmer’s Market, where they have a permanent presence, they have the potential for significant retail and wholesale sales of acidified canned foods. The project will also allow them to utilize excess vegetables by turning them into a more profitable value-added product.
