Jim has grown shiitake mushrooms since 2007, as well as a variety of fruits and vegetables since 2000. With the award, he will raise a climate controlled production house to ensure the year-long production of Shiitake and Lions Mane mushrooms.
They will be grown indoors on logs, as opposed to sawdust. He will sell at tailgate markets, to local restaurants and businesses, and online through his website.
